Lorenz Humbel from the canton of Aargau in Switzerland distills single-variety cherry brandies since 1995. The Swiss guru of cherry eau de vies search for new varieties and perfection brought him to spontaneous fermentation, a process that had been standard for alcoholic fermentations before the use of industrially produced selected yeasts. After distillation, the cherry eau de vie made from spontaneously fermented mash must be aged longer, as the esterification takes longer. The complex aroma of the BASLER LANGSTIELER, WILD 503 proves this greater effort are worthwhile.
