London Dry Gin 48 % vol
GIN 206 is a collaboration by master distiller Thomas Neubert and mixologist Oliver Ebert (Becketts Kopf, Berlin). It combines the aroma of orange blossom and zest with those of ginger, bergamot, coriander, cardamom, and lavender blossoms. But the classic juniper aroma is clearly at the center of this gin. These botanicals are macerated in grain alcohol with only 45 % ABV. Therefore, unwanted resins from the botanicals are not released. Thomas heats the macerate to circa 50° Celsius for about 12 hours which is then distilled very gently in a 150 liter copper pot still.
